Renae walked into the living holding a mug.
Pulled out a spoon.
Sat down on the couch.
And began eating the mugs contents.
All I know is that I smelled awesomeness mixed with a lot of sugar and hint of cinnamon...it was coffee cake!
I was amazed by this little trickery, so I began to search and play around and found a recipe for a 5 Minute Chocolate Cake in a Mug...with a few alterations I had two amazing Coconut Chocolate Chip Chocolate Cakes and the only thing that was missing was the ice cream.
Here is how it is done:
Little info...there are two mugs shown...but the recipe I am giving you makes one cup...why are there two cups you may ask...I have a wife with a killer sweet tooth (and I am not a dummy, when you make something like this you always have enough for the better half!).
First make sure that you have everything that you need. There are the proper "tools" like a fork and a tablespoon that you will need. As well as various dry and wet ingredients (sugar, flour, cocoa powder, chocolate chips, coconut, oil, eggs and milk).
We'll start with the dry ingredients first. Use the tablespoon to put in the flour, cocoa and sugar.
2 scoops cocoa powder
4 scoops flour
4 scoops sugar
The you wanna take that handy fork and make sure that the dry mix is well blended. It should look like this when it is all mixed up and ready to go!
Now we are ready to move on to the wet ingredients, so get your eggs, milk and vegetable oil ready

Use that awesome fork to beat one egg.
Now it's time to add in the wet ingredients.
1 egg beaten
3 scoops milk
3 scoops vegetable oil
Then you want to blend it all together. I noticed that the corners of the bottom of the mug are where the dry mix likes to hide, so do your best. It should look like that when it's mixed well.
This is the part where you can get a little more creative or take some more ownership. It's doesn't really matter what you put in there. I like coconut so we have had flakes in the fridge along with the chocolate chips. But honestly you could use peanut butter chips, white chocolate, Andes mint, butterscotch...the list is endless.
3 scoops of your "fillers"
or
2 scoops chocolate chips
2 scoops coconut flakes
Again, make sure that you mix it well. With mine the very first time the chocolate chips all collected in the center making a nice, and hot, surprise...but it's nice to have it spread out.
Now they are ready for the microwave.
Anywhere from 3 minutes to 4 minutes depending on your microwave. I just hang around and watch while I clean my baking messes.
Voila! You have yourself chocolate cake goodness! It would be paired perfectly with ice cream, but we haven't bought ice cream in months because of our grocery budget.
If you are really quick then it might get done in 5 minutes, but realistically speaking they can be made in under 10 minutes. They retain some heat, so it's either good to make them right before dinner and let them cool or pair it with ice cream right away and let the two mix.
Renae and I have even toyed with making a build your own cake in a mug dessert bar when having dinner guests or our next party. I'll let you know how that turns out.
